Food On A Hot Summer Night...

You know, I am so happy that I have a husband who will eat just about anything I put in front of him.  Only exceptions are asparagus and sweet potatoes.  These 100*+ days call for something light, cool, and nutritious.  I've taken to making homemade pita chips and mixing together some tasty chopped veggie salsa.  

This has become quite normal around here.  The homemade pita chips, hummus, chopped veggies, and lunch meat, cheese, and a few crackers.  I don't eat much so this little bit is more than enough for my Mister and I.  Both of us could stand to lose a few pounds so maybe eating like this will help with that as well as being able to prepare a meal without too much trouble or over-heating the house.

I made this yummy corn, tomato, avocado, salsa tonight.  It was easy as can be and so tasty.  All I did was thaw out some frozen corn, dice the tomato and avocado, chop a sweet red onion, and add fresh shredded Parmesan cheese.  Then I stirred together about a tablespoon of EVOO, three tablespoons of fresh lime juice, two minced garlic cloves, a smidge of red pepper flakes and salt/pepper to taste.  Pour that over the veggie mix and gently toss.  Easy, easy, easy!

The pita chips are the only thing I had to use heat for but it was only for a few minutes, so it didn't heat up the house at all.  I took out three whole wheat pita rounds, coated them with a little EVOO, cut them in wedges, sprinkled with garlic salt and baked, in a 400* oven, until crispy and golden brown.  

All of this took just minutes to prepare and I was in and out of the kitchen in no time!  Now that's my kind of meal on a hot summer night!

Short Reprieve and Beauty of a Curious Sort.

Last week, we got a very short reprieve from the brutal Oklahoma heat.  A front came through on Tuesday and cooled us down to the upper 80's.  That would be wonderful and truly it was but the humidity was high, which made it feel in the 90's.  Not a lot to get excited about unless you've been having temps in the upper 90's with that high humidity!  Heat indices well into the triple digits!  I feel so sorry for all those who have to work out in the heat, including my Mister.  He is wiped out when he gets home!  The heat just takes it out of him ever since he had a heat stroke a few years ago.  So, even while it is still hot, we certainly didn't complain about this past week.

Of course, I've had the Grands and we had to take advantage of the lower temps!  They decided to play Little House On The Prairie.  The little one was the brother and he helped Pa plow the fields while sister help Ma in the kitchen and garden.  I love the imagination of kids.  So innocent, so beautiful, and a heck of a lot of fun!

Sand is always a fun thing.  It was a little too chilly to play in water and I had a bag of sand that I use for the fire pit, so I filled up the water table and this was the kitchen!  They had so much fun even though Hoss kept throwing the sand out on the ground.  

This child, right here, is going to be the death of me!  She has no fear!  I turned around and she was standing on her old rocking horse.  It was one of those times that Granny doesn't dare yell at her in fear she might fall!  UGH!  I quietly told her to get down and thank the sweet Lord, she listened!  THEN I YELLED AT HER!  LoL  She is such a free spirited little creature but she sure makes my Granny heart stop beating at times!

About the only thing blooming, around here, is the Crepe Myrtle bush.  It is always so full and beautiful but they don't last long in the Oklahoma heat.

The only other thing with any color is these surprise Brown-eyed Susans.  I think the granddaughter planted some seeds there but it might be the result of the birds that visit the feeders.  Either way, I love them and was surely surprised when I looked out and they were blooming.

Our front porch is situated where the late afternoon sun shines directly on it.  The hot. afternoon. sun.!  You certainly don't want to be sitting in the porch swing when this happens.  I suspect one might just melt if they were caught in the heat!  I'm not kidding, it is just that hot!  So to help with that problem I had a brilliant idea!  My Mister thought I had lost my mind but then he has no vision!  LoL  He does but he has to see it before he understands it, where as, I just go with whatever pops in my head...that is even scary to type!  My head is a strange place!  Anyhow...

...I had these shuttered closet doors laying around so I had him put them up for me.  I know it looks strange but my hope is that the climbing rose bush or another vine will cover them and make  a beautiful shaded wall of sorts.  I really like it and it does work great!

The other side doesn't look great, right now, but when I get time, I will do a bit of decorating and it will be beautiful!  When you visit our home, never be surprised by anything you see!  Strange, Weird, Kooky, Unconventional...That's just how I roll!

Mentioning, strange, weird, and kooky...have you ever seen Air Plants?  

They are curious little plants that grow in the desert.  The attach themselves to rocks, other plants and sometimes even small animals, so I have read.  They don't have roots therefore they just sit on top on the ground.  They require nothing but air and a tiny bit of water.  Every couple of weeks, I put them in a bowl of water and the "leaves" absorb the water.  These little plants have captured my heart.  I look at them and think, "God sure is a funny guy! He is amazing and so artistic and creative with all of His creation!".

tick bites and boat rides...

Y'all, I really, really, have nothing to post about!!!  Life, these days, is mainly keeping the grandbabies and trying to stay cool!  That's what I do during the summer! 

I don't think I told y'all about the tick bite I got back in late April or early May. No big deal, right?  

Well, it certainly turned out to be a big deal!  It turned into Rocky Mountain Spotted Fever.  The epidemiologist couldn't believe that I wasn't hospitalized or very sick.  What you see in the picture is all the symptoms I had.  After a round of antibiotics, I am all clear.  I apparently have an incredible immune system!  

Oh my gosh, my allergies are off the charts!  I don't know what the deal is but I haven't had them this bad since I was a kid!  Whatever it is, the grands have also been battling allergies.  Of course, they are all better now but I'm just trying not to die!  My body fights off a disease like Rocky Mountain Spotted Fever but you let a tree bloom or somebody cut the grass and I'm out!  Really!!!???  LoL

Even though the calendar says it is still Spring, we are in full blown SUMMER HELL!  I'm not kidding!  Already we are having high heat!  So many people have been admitted to the hospitals with heat related illnesses.  I need to move someplace that stays a pleasant 70* year 'round.  Ever hear of a place like that? neither.  

I've been super busy with the grandbabies.  As you know, I keep them while their parents work.  People who say staying home is easy have never had a two year old running loose!  LoL  He keeps me hopping!  Thank God his big sister is here to help me entertain him!  He can't talk very well but the two words he definitely has down is "HEY" and "Granny".  And he says them as loud as he can and trust me...that boy has good vocal cords!  I wouldn't have it any other way!  He is the sweetest little boy but mischievous as all get out!  

Last weekend, we met up with our kids and grands, for a nice day at the lake.  Our granddaughter loves to drive the boat and has been doing it for several years now.  Well...the grandson thinks he should be driving too.  

He cracks me up standing in the seat and "driving" even though we are anchored!  He thinks he is really going somewhere!  It won't be long before he will be helping PawPaw drive, that's for sure.

His mama makes sure the babies have lots of sunscreen on.  She puts it everywhere!  Ears, face, arms, back, legs, and even... their hair!  LoL  Lake hair, don't care!
